Happy Thanksgiving Everyone!

We had a low-key but wonderful Thanksgiving this year. My mom and Mom#2 joined us for dinner. And, of course after being grateful and thankful for the countless good in our lives, Thanksgiving is all about the food. I made turkey, “fake” turkey, 2 gravies, mashed potatoes, green beans with almonds, creamed spinach, corn, and cranberry relish. I also tried a new dish this year and I made a sweet potato casserole. I did not think I was a big fan of sweet potatoes as I have only tried them previously as the canned variety with marshmallows as a kid-YUCK. I found a fantastic recipe at allrecipes.com and made a delicious casserole made with heavy cream, pecans, and brown sugar. It was fantastic! I also made a pumpkin and a pecan pie, but they bombed this year. I thought I would try and save time and so I bought a store brand pre-made pie crust and it was terrible. I will make the effort and make my crust from scratch next year. I will do the same with the vegan gravy as I bought a pre-made one as well and it was not very good either. I spent the time the day after Thanksgiving and was able to make a vegan gravy from scratch that tasted much better. Although, if you ask me now, I am thinking I would rather order pizza next year than spend all that time cooking :) .

Having pizza on Thanksgiving day is fine, too. Just being together, visiting, and relaxing would be a nice way to spend the day.
