Yesterday was birthday and I made, for the first time, a vegan carrot cake! It turned out delish! It seems to be more of a quick bread texture but I think with a few more tweaks it could be perfect. :) I used vegan cream cheese in the frosting and toasted pecans and coconut for the sides and top- YUMMO!
